Nana's Chicken Pot Pie
*A Heartwarming meal that my nana used to make for Sunday family dinner's. Something that I learned how to make after many meals at her house and watching her make it*
Warmer weather is months away as we are just in the start of 2022 and mid-way through the Winter season. With that I have been busting out all the warm hearty meals. This just happens to be one that I learned from my nana who passed away in February 2012. So, with no further ado below is what you will need and how to prep it all.
Ingredients:
- Boneless Chicken Breasts or Tender Strips
- Chicken Gravy (any-brand and you want about 10-14 cans or jars)
- Onion Powder
- Garlic Powder
- Salt
- Pepper
- Minced Garlic
- Minced Onion
- Thyme
- Rosemary
- Parsley
- Basil
- Oregano
- Italian Seasoning
- Seasonal Salt
- Potatoes
- Carrots
- Baby Pearl Onions *Onion Chopped up to desired size*
- Bisquick
Instructions:
Peel your desired number of potatoes, when I make mine, I use roughly anywhere from FIVE to TEN pounds of potatoes. Yes, I love potatoes. I use about TWO pounds of carrots or THREE depending on the desire for carrots in my pot pie. Then get the chicken in a pot of Chicken Broth or plain water, add a little of each seasoning to the boiling chicken, let it boil till the chicken is cooked it makes the shredding process so, so very much easier. I tend to use up to at least 6lbs or 8lbs of chicken depending on the cut and sale. While that's boiling after the you've pealed the potatoes cut them up into bite size bites go ahead and boil them. Boil the carrots with nothing but the carrots don't add butter or anything. While that's all happening take all the seasonings and coat the bottom of your desired pot pie pan. Once you've opened all the gravy dump that in the pan and stir it up, so the seasonings mix well. Once the chicken is done boiling take 2 cups of the brother that was created and mix into the gravy it will help thin it out. Shred the chicken when I do that, I take the fatty parts out and throw them away. That way you don't get any weird surprises. Then I place them it all in the pan with the gravy mix, once the carrots are semi soft, strain them and add them into the pot, again do the same thing with the potatoes. Mix all of them up and make sure that more of the gravy is on top doesn't have to cover all the food but at least a good portion. Then comes the fun part. I can't for the love of me tell you how many times I've either made too much or too little bisquick for the topping. (Keep in mind this meal is just as good without served with bread)
Bisquick: I don't follow the instructions on the box at all ever! I pour a desired amount in a bowl and eyeshot the milk I use I want to make a batter not like for pancakes but thicker. Then add to the top of the pot pie insides. While doing the mixing to this it's probably ideal that you preheat your oven to 450 that way it only takes about 30-45minutes to bake. Once done and golden brown on top and not soft or uncooked in the middle the dinner is done.
Ultimately this is a SUNDAY or WEEKEND or day you're not working dish because it takes a couple hours from start to finish. But it's totally worth it. Enjoy this and tweak it to your desire. Change the veggies or potatoes and comment how it comes out. Love trying new things. ENJOY!
